In a way, the post-War period was a turning point in coffee history. Coffee supplies had been constrained during the dark times of the War and military personnel had experienced time abroad.

A point-by-point comparison with what commercial coffee people are currently advocating could be instructive. My guess is that few things would be radically different. Yet, coffee knowledge has increased tremendously during the last fifty years.

Perhaps the saddest part is that there is now a wide gap between the coffee craft (baristars in Third Wave cafés) and coffee made at home. Apart from a few coffee geeks, few people get to experiment much with their coffee brewing methods. Not that anyone is to blame, but there’s a lot of room for improvement.

Hi Taylor, recently got back to Paris after my one-month film shoot in the States and popped by Coutume today to say hello and au revoir, only to learn that you had moved on already. In any case, wanted to say thanks for all the delicious coffees you served up (mostly flat whites as you may recall) and for the good conversations. Feel free to drop me an email to stay in touch. I'm not sure whether you've left Paris or not at this point...
Best wishes,
Ned
(who was spending quite a lot of time at Coutume in Aug. / Sept. / Oct.)
